Longan flowers are harvested in Zhongliao, Nantou, an unpolluted environment with pristine air and excellent water resulting in rich, aromatic longan honey that carries a natural sweetness. Once harvested, workers are required to handpick each flower and remove wilted branches or insects before they're dried under natural sunlight; the flowers are then roasted over a large traditional stove to trap the sweet aroma of longan into each flower.
